Weekly Meal Kit | August 15

Dinners this week are easy peasy, and full of veggies, so you’ll be healthy, fed and ready to take on all of your Summer plans! Think: a panzanella salad with five (yes five!) different summer veggies, a cool, creamy chickpea soup topped with a chopped veg salad, and red coconut curry with yep, you guessed it, loads of veg. We just can’t help ourselves in summer! Wisco’s bounty is just too perfect, y’all.

We’re super excited about this week’s menu! It’s basically all of our favorite summer foods in one go, y’all. Niçoise salads chock-full of allll the vegetables, rich bbq sammies with cool, crispy slaw and pickles, followed up with slow-cooked tomato and eggplant laden ratatouille? Oh, and (vegan) dark chocolate macaroons to finish? Yep, we’re here for it!

We’re really looking forward to this week’s menu, aren’t you? RP’s tortellini with our house-made pesto and loads of local veg? Sheet pan nachos with chips from La Cosecha? And, everyone’s favorite, lo mein? Yep, we can’t wait! Add-in a creamy and zesty lime mousse for a sweet treat and it’s going to be a tasty, and vegtastic, week, y’all.

Summer’s bounty is just rolling in, friends! Look for alll the local produce this week. Think: kale, carrots, radishes, turnips, blueberries, cabbage, zucchini, potatoes, tomatoes and more! All of it making your kale caesar salads, vegetable galettes from Tart, Korean-inspired kimchi stew, and blueberry cobbler just a little bit more delicious! We can’t wait.

Weekly Meal Kit | July 18

We’re featuring a recipe from Farmer Lauren at Raleigh’s Hillside Farm this week! Enjoy her grandmother’s recipe for Zucchini Pie — it’s been a favorite in her family for decades. Raleigh’s is taking a break from farming this summer, so we sourced fresh vegetables (think: allll of the zucchini, scallions, and herbs galore) from other amazing local farms. It doesn’t get much more local than that, eh, friends?

Nothing says summer in Wisconsin more than brats, right, friends? Lucky for us we were able to source brats from our friends at Enos Farms for you. And they have the BEST pork, y’all. Their pigs are raised on certified organic land, pasture-raised and fed a diverse diet of organic peas, oats, corn, silage (fermented plant matter), pumpkins and woodland nutrients as they root around the hills and vales. And that comes through when you try their meat!

We hope that y’all had a great holiday weekend! Get excited for a short, but delicious, week filled homemade pizza kits, sloppy joes and some spicy Indian-inspired goodness. Get excited to feast on a steak grill kit with a carrot raisin salad and asparagus, noodles with dan dan sauce, bok choy and roasted peanuts, followed by shakshuka this week! And, as an extra special treat, double chocolate cupcakes for all. Yes, you heard us. CUPCAKES. We’re celebrating our 5th Birthday and wanted to send a little birthday love to our favorite people. Thank you for helping us reach this milestone, friends!

Summer is in full swing and the weather is glorious! It’s going to be the perfect week for grilling up those kebabs, right, friends? They sound just perfect with the grilled veggie couscous and herby chimichurri. Followed with an easy veg-laden corn chowder with Madison Sourdough rolls and (our all-time fave) smothered burritos with green chile sauce? And with spiced Moroccan peanut cookies for dessert? Yup, life’s looking good!

School’s out, the weather is warm and life is good. We’re out and about enjoying this season to the fullest! So quick, easy meals — chock-full of flavor and veg – make evenings go so much more smoothly. Meals like RP’s fusilli with Spring greens pesto and roasted vegetables, lemony radish and brown rice soup, and dal mahkani over fluffy basmati rice! With bike rides and neighborhood walks on tap, the week is looking easier and more delicious!
