Mafe, a slightly-spicy Senegalese peanut-based stew, is a blend of rich, creamy peanut butter, tomato, and hearty vegetables like potatoes, bok choy and cabbage. With  sweet potato and a base of brown rice, our take on this West African classic is dinner all-in-one!

Ingredients: Yukon gold potato, cabbage, onion, tomato, vegetable stock, sweet potato, eggplant, bok choy, peanut butter, okra, jalapeño, serrano, garlic, ginger, cayenne, red chile flake, lime, salt, olive oil. Brown rice.
