Bread Varieties

• Miche – An uncompromising loaf: large, dark, and bold. Designed for keeping quality, increased acidity, high hydration, and a thick crust. This hearty 5lb loaf can be broken down into quarters and wrapped. When wrapped, it will keep for at least a week.
• Sourdough Batard – This is Madison Sourdough Company’s flagship sourdough, crusty yet tender. Baked in a slightly larger format (2 lbs) for better keeping quality and more use. Cut slices or rip off chunks, dip in savory oils or recreate the French toast you’ve been missing from the MSCo cafe!
